What is Nan Gyi Thoke?
Nan Gyi refers to thick rice noodle, while "thoke" means salad. The salad in Myanmar generally include, garlic oil, chilli oil, roasted chickpea flour which makes the salad different from other salad style. In Nan Gyi Thoke, the main ingredients are - thick noodles, chicken curry, roasted chickpea flour, fish sauce and salt or chicken powder for seasoning. The noodle salad dish is often served with lime, sliced onions and boiled egg and one of the famous breakfast dishes.

Thick rice noodles
Chicken Curry
Roasted Chickpea Flour
Garlic oil
Roasted chilli powder
Lime
Fish sauce
Coriander
Fish cake ( if available and liked)
Tip: The real flavour comes from the chicken curry oil and perfectly roasted chickpea flour.
Cooking Instructions
Prepare the Chicken Curry: Cook chicken in turmeric, onions, garlic, and chilli powder until tender. Shred the chicken and keep the curry oil/gravy.
Boil the Noodles: Cook the thick rice noodles as per the package instructions. Drain and set aside.
Mix the Salad: In a large bowl, combine noodles, shredded chicken, curry gravy, chickpea flour, and a squeeze of lime.
Top It Off: Garnish with fried onions, sliced boiled egg, coriander, and chilli oil.
Nan Gyi Thoke is often a go-to breakfast or lunch in Myanmar and is mostly popular in Mandalay, but each region might give it a small twist, adding more oil, while some prefer it spicy.
